Traditional One pot Dal Makhani Recipe

Dal Makhani is a delicious, creamy, and flavourful North Indian dish made from whole black lentils (urad dal) and kidney beans. It is cooked on low flame. This dish is the epitome of Indian comfort food. Let's see how it can be made:



Ingredients:

For the Dal:

  • 1 cup whole black lentils (urad dal)

  • 1/4 cup kidney beans (rajma)

  • 4-5 cups water (for pressure cooking)

  • 1/2 tsp turmeric powder

  • 1/2 tsp salt

For the Tempering:

  • 2 tbsp butter (or ghee)

  • 1 tbsp oil

  • 2 medium onions, finely chopped

  • 2 medium tomatoes, pureed

  • 1 tbsp ginger-garlic paste

  • 1/2 tsp turmeric powder

  • 1 tsp red chili powder (adjust to taste)

  • 1 tsp cumin seeds

  • 1 tsp coriander powder

  • 1/2 tsp garam masala

  • 1/4 cup fresh cream

  • 1 tbsp kasuri methi (dried fenugreek leaves)


Traditional One pot Dal Makhani Recipe

Method of making Dal Makhani:

  • Firstly soak the urad dal and rajma overnight or for at least 8 hours.

  • Wash them and cook with 4-5 cups of water, turmeric, and salt for 8-10 whistles or until they become soft.

  • Now heat butter and oil in a large pan or wok.

  • Add cumin seeds and let them crackle. Then, add chopped onions and fry until they become golden brown.

  • Now add ginger-garlic paste and cook till the raw smell disappears.

  • Now add turmeric, red chili powder, garam masala, and coriander powder. Mix well. Add tomato puree and cook until the oil separates from the mixture, which may take 8-10 minutes.

  • Now add cooked dal and rajma and stir well. Mash some of the dals lightly with a spoon for a creamy texture.

  • Now reduce the heat and simmer it for 30-40 minutes, stirring occasionally to prevent sticking. You can add water as needed to adjust the thickness.

  • After this, add fresh cream and kasuri methi and simmer for another 5 minutes.

  • Garnish the cooked dal with cream and chopped coriander. Eat it with naan, paratha, or basmati rice.
