Light and Healthy Spinach and Sweet Corn Soup Recipe

Spinach and sweet corn soup is light, nutritious, and delicious with the earthy aroma of spinach and the sweetness of corn. We get all the nutrients of spinach from this soup. It is a quick and healthy option which is very healthy for our health. Let's see how to make this soup:



Ingredients:

  • 2 cups fresh spinach leaves, roughly chopped

  • 1 cup sweet corn (fresh, canned, or frozen)

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tbsp olive oil or butter

  • 3 cups vegetable broth or water

  • 1/2 cup milk (dairy or plant-based) or 1/4 cup coconut milk for creaminess

  • Salt and black pepper to taste

  • 1/2 tsp ground black pepper

  • 1/2 tsp cumin powder (for added flavor)

  • Fresh parsley or cilantro for garnish

Method of making Spinach and Sweet Corn Soup:

  • First heat olive oil or butter in a large pot over medium heat. Add chopped onion and garlic and saute for 2-3 minutes until the onion becomes translucent and fragrant.

  • After this, add chopped spinach and sweet corn to the pan, mix well, and cook for 2-3 minutes.

  • After this, add vegetable broth or water to it. Add salt, black pepper, and cumin powder as per taste and mix well.

  • Cover the soup and cook for about 10 minutes.

  • After ten minutes, when all the vegetables become soft, remove the pot from the heat.

  • Blend the soup slightly coarsely. Do not make a very fine paste of it.

  • Pour the soup back into the pan and add milk or coconut milk for a creamy consistency and let it heat on low flame for five to ten minutes.

  • Pour the soup into a bowl, garnish with fresh coriander leaves and serve with toast or croutons.

  • This soup is light and is also very beneficial for our health.
