One Pot Miso Soup with Tofu

Ingredients:

4 cups water

1/4 cup miso paste (white or yellow)

1 cup tofu, cut into small cubes

1 sheet nori (seaweed), cut into small pieces

2 green onions, finely sliced

1/2 cup wakame seaweed (soaked in water for 5 minutes)

1/2 cup mushrooms (shiitake or button), sliced (optional)



One Pot Miso Soup with Tofu


Method of making Miso Soup with Tofu:

  • Heat a pot of water over medium heat, but do not boil.

  • If you are using mushrooms in the soup, add them to the pot and simmer for 3-4 minutes until soft.

  • In a small bowl, mix the miso paste with a few tablespoons of hot water until smooth.

  • Add the melted miso to the pot, stirring gently. Avoid boiling it to preserve the miso's nutrients and flavor.

  • Gently add the tofu pieces, nori pieces, and soaked wakame (if using) to the soup.

  • Then simmer for 1-2 minutes to warm through.

  • Now add the chopped green onion and stir the soup. Remove the soup from the heat after a while.

  • Now pour the soup into bowls and serve hot.
