How to make Lemon Coriander Soup

Ingredients:

  • 1/4 cup fresh coriander leaves, finely chopped

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 1-inch piece of ginger, grated

  • 1 medium carrot, finely chopped

  • 1/4 cup cabbage, finely shredded

  • 4 cups vegetable broth or water

  • 2 tbsp lemon juice (adjust to taste)

  • 1 tsp olive oil or butter

  • Salt and black pepper to taste

  • 1 tsp cornflour powder (for slight thickening)

  • Lemon wedges and fresh coriander for garnish


How to make Lemon Coriander Soup

Method of making Lemon Coriander Soup:

  • Heat a pan over medium heat and add olive oil.

  • Add chopped onion, garlic, and ginger, and saute for 2-3 minutes.

  • After this, add chopped carrots and chopped cabbage. Mix it well and cook for 3-4 minutes until the vegetables become soft.

  • Add vegetable broth or water and boil the soup on low flame for 8-10 minutes.

  • To thicken the soup a little, dissolve corn flour in 2 tablespoons of water and add it to the soup. Let it boil for another 2-3 minutes.

  • After this, add chopped coriander leaves, lemon juice, salt, and pepper and mix well.

  • After cooking, pour the soup into bowls, garnish it with fresh coriander and lemon wedges, and serve hot.
