Healthy and tasty Mushroom and Barley Soup Recipe

Mushrooms and barley are very nutritious, providing many health benefits. Mushrooms have low-calorie content but are rich in vitamins, minerals, and antioxidants. Barley is rich in fiber, vitamins, and essential minerals. It is used to make soups, stews, and risotto. Many types of nutritious dishes can be made by mixing mushrooms and barley, which fills our stomachs and is also very beneficial for our health. Let's see how to make one of the dishes with Mushrooms and barley:


Ingredients:

  • 1 cup pearl barley, rinsed

  • 2 cups mushrooms (button, cremini, or a mix), sliced

  • 1 small onion, finely chopped

  • 2-3 garlic cloves, minced

  • 1 medium carrot, diced

  • 1 celery stalk, diced

  • 1 tbsp olive oil or butter

  • 4 cups vegetable or chicken broth

  • 1/2 tsp dried thyme or rosemary

  • Salt and black pepper to taste

  • Fresh parsley or chives for garnish

Method of making Mushroom and Barley Soup:

  • Wash the barley under cold water and keep it aside. Wash the mushrooms and chop them into small pieces.

  • Heat oil in a pan and add chopped onion and garlic. Saute well until the onion and garlic are slightly cooked and fragrant.

  • Add chopped mushrooms, carrots, and celery stalk and saute well. Cook the vegetables for 5-7 minutes until they are soft and the mushrooms release their moisture.

  • Now add the barley and mix well.

  • Add dried oregano or rosemary, salt, and pepper, and mix everything well.

  • After mixing, add vegetable or chicken broth and let the soup simmer on low flame for about 30-40 minutes.

  • Check the soup after 40 minutes. If the vegetables are cooked, turn off the gas and pour the hot soup into bowls and serve with crispy bread or a light salad.
