Healthy and Tasty Cauliflower and Leek Soup

Ingredients:

  • 1 medium cauliflower, cut into florets

  • 2 medium leeks, white and light green parts only, sliced

  • 2-3 garlic cloves, minced

  • 1 medium potato, peeled and diced (for extra creaminess)

  • 3 cups vegetable broth or water

  • 1/2 cup milk, cream, or coconut milk (optional for creaminess)

  • 1 tbsp olive oil or butter

  • Salt and black pepper to taste

  • Fresh parsley or chives for garnish

Method of making Cauliflower and Leek Soup:

  • Clean the cauliflower and break it into small pieces.

  • Heat the olive oil in a pan over medium heat.

  • Add the chopped leeks and minced garlic, mix well, and sauté for 3-4 minutes.

  • Add the cauliflower florets, chopped potatoes (if using), salt, and pepper to the pan. Mix well and sauté for 5 minutes.

  • Add vegetable broth or water and simmer for 15-20 minutes, or until the cauliflower and potatoes are tender.

  • Remove the pan from the heat. Let the soup cool slightly and then blend.

  • Pour the soup back into the pan. To increase the creaminess of the soup, add milk, cream, or coconut milk and heat the soup over low heat.

  • Ladle the hot soup into bowls and serve with crusty bread or a light side salad.
