One Pot Butternut Squash Soup


Butternut squash is a nutrient-rich squash. It has a sweet, nutty flavor. It is known for its creamy texture. Its vibrant orange flesh is loaded with vitamins A and C. It is very beneficial for vision, immunity, and skin health. Butternut squash is rich in dietary fiber, potassium, and antioxidants and benefits us in many ways. This soup is low in calories, but it is very filling. It has a natural sweetness that pairs well with the savory spices. It is easy to cook. Let's see how to make this:



Ingredients:

  • 1 medium butternut squash, peeled, seeded, and diced (about 4 cups)

  • 1 small onion, chopped

  • 2-3 garlic cloves, minced

  • 1 medium carrot, peeled and chopped

  • 3 cups vegetable broth

  • 1/2 cup coconut milk, cream, or milk (for creaminess)

  • 1 tbsp olive oil or butter

  • 1/2 tsp ground nutmeg 

  • Salt and black pepper to taste

  • Pumpkin seeds or fresh parsley for garnish


One Pot Butternut Squash Soup

Method of making Butternut Squash Soup:

  • Heat olive oil in a large pan over medium heat.

  • Add chopped onion and garlic and saute for 2-3 minutes until fragrant.

  • Add butternut squash and chopped carrots to the pan and mix well. Cover and cook for 5 minutes.

  • After roasting, add vegetable broth and make sure the vegetables are covered. Add ground nutmeg, salt, and pepper to taste.

  • After this, cover the vegetables and simmer on low heat for 20-25 minutes or until the squash and carrots become soft.

  • After this, remove the pan from the heat and let it cool slightly.

  • After cooling, blend the soup until smooth and make a puree.

  • After this, pour the soup back into the pot, add coconut milk, cream, or milk for more creaminess, and mix well.

  • Once cooked, pour the soup into bowls, garnish with pumpkin seeds, and serve hot with crusty bread or a side salad.
