One Pot Chicken and Vegetable Soup Recipe

Chicken and vegetables are a classic, nutritious pairing that is packed with nutrients. Chicken is rich in essential nutrients like protein, vitamin B, zinc, and iron. It is very beneficial for muscles. On the other hand, some vegetables like carrots, celery, and green beans are rich in fiber, vitamins, and antioxidants, which are great for digestion, immunity, and overall health. Chicken and vegetables together make a balanced and delicious meal. We can make a variety of dishes from it, ranging from soups and stir-fries to stews and salads. Let's see how to make soup from it:



Ingredients:

  • 1 cup cooked, shredded chicken (breast or thigh meat)

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 2 medium carrots, diced

  • 2 celery stalks, diced

  • 1 medium potato, peeled and diced (optional)

  • 1 cup green beans or peas

  • 4 cups chicken broth or water

  • 1 tbsp olive oil or butter

  • 1/2 tsp dried thyme or mixed herbs

  • Salt and black pepper to taste

  • Fresh parsley or cilantro for garnish

Method of Making Chicken and Vegetable Soup:

  • Put a pan on medium heat. Heat olive oil or butter in a large pot.

  • Add onion and garlic and mix well and sauté for 2-3 minutes until fragrant.

  • After this, add carrots, celery, and potatoes (if using), mix well, and cook it for 5 minutes.

  • After this, add chicken broth and let it boil. Reduce the heat cover it and cook for 10-15 minutes. So that the vegetables become soft.

  • After this, add chopped chicken and green beans (or peas) and mix well. Let it boil for 5 minutes.

  • Now add thyme or mixed herbs, salt, and pepper to it according to taste and mix. You can adjust the seasoning according to need.

  • After cooking the soup, pour it into bowls and garnish with fresh coriander. You can eat it with crusty bread or crackers.
