How to make Vegan Chickpea salad

Chickpea salad is a quick and nutritious dish. It is made from boiled chickpeas. This salad is light and filling yet full of flavor. This salad is perfect for a light meal or a refreshing side dish. It is very easy to make. Here is how to make it.


Serving- 3-4 people time- 1/2 hour

Ingredients:

  • 2 cups cooked chickpeas (canned or freshly boiled)

  • 1 medium cucumber, diced

  • 1 medium tomato, diced

  • 1 small red onion, finely chopped

  • 1 medium bell pepper (red, green, or yellow), diced

  • 1-2 green chilies, finely chopped (optional)

  • 2 tablespoons fresh coriander leaves, chopped

  • 1 tablespoon lemon juice

  • 1 tablespoon olive oil 

  • 1/2 teaspoon chaat masala (optional, for extra tang)

  • 1/2 teaspoon roasted cumin powder

  • Salt to taste

  • Black pepper to taste

Method of making Chickpea Salad

  • Soak the dried chickpeas in water overnight and boil them in a pressure cooker for 2-3 whistles the next day.

  • When the chickpeas are cooked well, put them in a mixing bowl and add chopped cucumber, tomato, onion, and capsicum. If you like spicy food, you can also add green chilies to it.

  • Now add chopped coriander leaves, lemon juice, olive oil, salt, black pepper powder, and roasted cumin seeds and mix well. Taste it once and if you feel something is missing or less adjust it.

  • Your chickpea salad is ready. Serve it and enjoy.


Tips:


  • For extra nutrition and variety, you can also add other ingredients like avocado, grated carrot, pomegranate seeds, or sprouted grains to it.

  • Add roasted peanuts, sunflower seeds, or pumpkin seeds to the salad, this will give you a good crunch in the salad.

  • Tahini-based or mustard-based dressings can be added for a different flavor.

  • This vegetarian chickpea salad is refreshing and rich in protein. You can add tofu to make it even healthier.
