Sambar is a popular dish in South India that people eat every day. It is made with lentils, vegetables, and some spices. It is a kind of stew usually eaten with idli, dosa, rice, or vada. It is very easy to make. It gives you the nutrients of both lentils and vegetables. Let's start making it.
First of all, let's see what ingredients we need to make it:
For the Dal:
1 cup toor dal (pigeon peas)
1/4 teaspoon turmeric powder
2 cups water
Ingredients for sambar:
1 small carrot, diced
1 small potato, diced
2-3 drumsticks (moringa), cut into 2-inch pieces
1 small brinjal (eggplant), chopped
1 tomato, chopped
1 small onion or 5-6 shallots, chopped
1 tablespoon tamarind paste
2 tablespoon Sambar Masala
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (optional)
1 cube of jaggery
Salt, to taste
For Tempering:
2 tablespoons mustard oil
1 teaspoon mustard seeds
1/2 teaspoon fenugreek seeds (methi)
1-2 dried red chilies
A pinch of asafoetida (hing)
10-12 curry leaves
Fresh coriander leaves, chopped

Tip:
Homemade sambar powder makes the sambar even tastier.
If the sambar is too thick, adjust the consistency by adding water. It should neither be too thick nor too watery.
You can also use seasonal vegetables like pumpkin, radish, ladyfinger, or spinach as per your choice.
