How to make Appam: in easy steps

Appam is a kind of thin pancake made from fermented rice. We must add Coconut milk and grated coconut to it. It is made in less oil, so it is also very beneficial for health. People usually eat it in the morning for breakfast. It is a tasty and light breakfast. Let's see how it is made:



Serve: 4 People

Ingredients to make appam:

  • 1 cup raw rice (ideally parboiled rice or idli rice)

  • 1/4 cup cooked rice or poha 

  • 1/2 cup grated coconut (fresh or desiccated)

  • 1/4 tsp dry active yeast

  • 1 tbsp sugar

  • Salt to taste

  • Water, as needed

  • 1/4 cup coconut milk (optional, for a richer flavor)


How to make Appam: in easy steps

Method of making Appam:

  • Wash the raw rice thoroughly and soak it in water for 4-5 hours.

  • While the rice is soaking we will prepare the yeast mixture. For this, dissolve 1 tbsp sugar and 1/4 tsp yeast in 1/4 cup warm water. Let it sit for 10-15 minutes till it becomes frothy.

  • We will prepare the rice batter by grinding it. Strain the soaked rice and add it to the blender along with the cooked rice, grated coconut and yeast mixture. Add water little by little and prepare a smooth, slightly thick batter.

  • Place the batter in a large bowl and cover it and let it ferment for 8-10 hours or overnight (depending on the room temperature) till the batter doubles in size.

  • Once fermented, add salt as per taste and dilute the batter by adding some water to get a pourable consistency.

  • Heat the appam pan or a non-stick pan on medium heat.

  • Lightly grease the pan with oil.

  • Pour a ladle of batter in the centre of the pan. Swirl the pan to spread the batter to the edges, making it thinner at the edges and thicker in the centre.

  • Cover the pan with a lid and cook for 2-3 minutes until the edges are crispy and the centre is cooked (it should have a soft and spongy texture).

  • There is no need to flip the appam. Remove it from the pan once it is cooked.

  • Serve the appam hot with stew, coconut chutney and enjoy your delicious and soft appam!
